If you used cleaner then all the mold is dead. When you buy used stuff you get "used" stuff. I've been to breweries that were grose but when you chem clean it should be good... just go for it! If it didn't come off during a soak or scrubbing it wont come off!

You shouldn't take the lid off so much, or not at all. If you oxidize it not even all the hops in north america will fix it. Active fermintation will last up to and sometimes longer than 48 hours. After that it just sits there.

I have read about using a cornilius keg for a bright tank, but that seems so small. If I use a sanke (legally obtained of course), can I use the fermenter conversion and just shorten the racking arm? Also how do I carbonate then bottle out of the tank?!
