    Spiced Porter

Hey mate, Just checked my records. I left it in the primary for 29 days, and the secondary for 36. Unfortunately I stopped recording there, but I seem to recall drinking it over the next 2-3 months, and it only getting better with time. I'd suggest at LEAST three months total, probably...

How cold is too cold (to cold crash)?

Thanks Jim. I'm a bit of a worrier when it comes to by beer, so I appreciate the reassurance.

How cold is too cold (to cold crash)?

Just to clarify something I should have mentioned. I need enough yeast left to bottle carbonate... And the 33F is extremely stable. I've had my lager in it for nearly two months with no variance in temp.

How cold is too cold (to cold crash)?

So I have a beer lagering at 33F, and need to cold crash an English Bitter. Is it safe to cold crash it at 33F for a few days? Too cold? Thanks!

Over carbonation for a Belgian Tripel

How about for bottles? Same, but x50?

Over carbonation for a Belgian Tripel

So somehow my Tripel ended up way over-carbed. Short of manually releasing the CO2, is there anything to be done? I'm planning to age the beer for several months longer anyway - will this help?

    Spiced Porter

So I just bottled this kit, and used the whole spice packet. I spoke at length to the owner of my home brew shop about it. He recommended using the whole packet, but allowing it to mellow out for 3 months (total) before drinking. For me that was 9 weeks of fermenter time (primary and...

    Brew kettle help

I'd think 4 gallons would be fine for a 2 gallon boil. I boil 5 gallons in a 7 gallon pot, so you should have plenty of room. Good luck man! Welcome to the obsession!

    Cream Ale process question

Haha, small world. No, haven't really gotten into the Pop Shop. I'm more of a Pour House guy (Westmont beer bar - think it might be on the newish side). I'm definitely going to pick up some gelatin tonight and try that as well. Thanks again! I owe you a cream ale when you're in town.

    Cream Ale process question

Aesthetics is exactly what I'm going for. Thanks for the feedback!

    Cream Ale process question

So, total noob question, but I've never cold crashed/lagered a beer before, and I'm not sure of the process. As best I can tell it goes something like: Primary Fermentation w/ optional secondary until fermentation finished. Drop to 35-40 F for a day or two. Bottle/keg. Allow to come back up...

    Specific Gravity???

Thanks guys. You guessed it - I am an extract brewer (for now). My first batch tasted pretty good. I'm not especially worried, but I'm a bit of a perfectionist. I've got the "have a homebrew" part down. Now I need to relax and not worry.

    Specific Gravity???

Hey, piggybacking on Dawg's thread... I've brewed two batches now, and both times my OG has been low, and my FG has been a bit high. I think I need a more vigorous boil for the OG (working to date on a terrible electric stovetop), but would this be affecting my FG as well? I've fermented for...
