    I have had to be gone for a week at a time during a ferment, and getting back ONE fruit fly has vinegared the entire schiznocitie! I am now making a blow-off tube into an airlock 'grant' that will have a normal air lock on top of it. It's a 2-stage blowoff air lock, and I hope it helps keep...

    i'd do all the malt at the beginning. unless you think bacteria can't remain viable in a dry, sealed bag. (or the dust on the outside of it, etc.) i'd let the sugar boil at least 20 mins. thats what pasturization in the 170's requires, i belive. 100% Hallertau hops could be nice. goldings in @...

    Beer is flat

    are you storing it cold or at room temp? makes a difference. I start @ 35-40 first day, and shake at least 3 times, and re-pressurize. keep it cold, and slap the gas on it once in a while (at 18). i unhook gas to shake it, don't want no backtracking.
