So you did a single step mash like you had always done? If so, i would say your RIMS probably did pull more out of yiur crystals and that made it darker. Just my opinion though.

Yep, need to move to a burner. I believe those glass tops conduct the heat so you don't get the concentrated heat like from a flame.

I always say if its drinkable, go for it abs nust take good notes. Plus if you let it condition for awhile it could be really goodn

Living in Southwest AZ I have the same issues with hot ground water. I do what BrunDog says above. I run tap water thru my wort chiller and bring it down to about 120 or so (really down to waterever my tap water is at. Then I start with the ice bath. I bring 3 gal of hot wort (200+) down to 75...
