    This problem is tough, because you don't know what the problem is? i had a beer go on the ceiling from my hand, turns out the culprit was using too much great quality wheat munton's dme. i recomend to you to lower the temps a touch when pouring the wirt, use less wheat,and a pinch less sugar.

    Their just dryed herbal store hops, i use them and mine have a pellet hop and lemon flavor ,yours could have a regular flavor or orange or lemon?

    Wine building pressure but no release.

    I don't use an airlock, simply drilled a hole in bucket lid added a small metal screen which was hot glued in place. keeps out bugs the size of a quarter.

    I made a simple beer with hops and amber only. a toasted hazelnut for two gallons. came out light and toasty nutty and breakfast toasty.

    The dark dme is really medium dme, honestly. so you could boil a little less turning it into a light beer. a brown?colored beer.
