will making a starter with this yeast make the beer get funkier faster?
i assume not, but figured i would ask anyways. planning on using this yeast for my next saison. tried it once before on a rhubarb saison and had similar experiences - got very good after time, about 4-6 months.
i have been doing a bunch of research on this recently, as this past weekend i collected the dregs of 3 crooked stave bottles and am planning on using them in my next 3 gallon batch - my only question is which method i should go about using them. it seems like i could do either of these options...
specialty grains:
1/2 lb roasted barley
1/2 lb chocolate malt
1/2 lb black malt
6 lbs amber lme (3 lbs at 60 mins, adding the rest with the 10 min hop addition)
1 lb lactose
60 min hop: 1/2 oz german magnum
10 min hop: 1 oz willamette
yeast: safale s-04
