I'll probably do the same as before. Pale ales and IPA's but no imperials. Some porters/stouts. Amazing how much I forgot about the overall process after ten years. I had a 15 gallon and don't remember that being too small.
Thanks for those suggestions. I'm in deep research mode and the first thing I see is a 5k budget seems a bit high. I remember prices being much higher back in the day for upper tier equipment. I'm not going cheap but looks like I can get some very nice pieces for much less.

Based on no actual data, I figured the stick thermometer would be more accurate. But when I got a 40° degree reading from ice water and the laser had 31.5°, that made me question the stick. I'll check out Thermoworks.
I have a stick and laser temperature probes. I they were giving me different readings so I took them to the local brew shop. We tested his stick probe, my stick probe and my laser in cold tap and hot tap. His stick read about 4° higher than my stick and my laser about 4-8° lower at cold tap...
