    Simple Yeast Storage Procedure

It's going to take a few days to for that yeast to wake up. And 3 gallons is a lot of wort for amount of yeast. Just give it more time. You should see activity in a few days.

    Sanitizing hibiscus for secondary?

Am making a hibiscus mango brew and I want to know what's the best method of sanitizing the hibiscus. I'm using 1 pound of hibiscus for a 5 gallon batch. I don't want to boil the hibiscus cuz I don't want to extract all of its flavor. Can I just use star-san?

    San Francisco Lager Yeast

I think 70-72 is to warm for SF lager yeast I like to keep it in low 60 high 50's. Is 72 your ambient temperature? You got to remember that you're fermentation is going to create heat also. So you can reach temps of 75 or more. You can't use a swap cooler method to keep temps down?

And use a yeast calculator to give you a estimate of yeast cells to pitch. For now I would pick up a pack or two of dry lager yeast just in...
