I tried putting the probe down into a pitcher of water but that didn't seem to help much. Will try it with two 6.5 gallon fermenters of water in there to see if that may do it.
Just got an Inkbird ITC-310 temperature cobtroller and hooked it up to my chest freezer. I have the probe in a pitcher of water inside the freezer, and have the temperature set to 50 F, and the variance set at 2 degrees F. After a couple of hours the temperasure is reading 38.5 degrees.

It has been about 2 weeks. Turns out I heard the pfft when I opened it, so I just drank it. :) Not quite carbonated enough, but I figure a few more days and I should be good.
If you open a bottle of home brew, and it has not carbonated yet (no pfft sound when you open), will it still carbonate if you just put a new, sanitized, cap on it and give it more time?

Could you use a big ol' plastic tub full of frozen water bottles to cold crash, and swap out the frozen bottles each day?

I've never cold crashed before. I am assuming it means putting your carboy in a fridge for a certain amount of time? How long? And do you have to let it warm back up before you bottle?
