    I'd say 30C (BJCP 2015 - Winter Seasonal) is the category you want to enter it in. Maybe state American Strong Ale as the underlying base?

    I think you'd be okay. I brewed late Sept/early Oct before and it was great. Even better around early February.

    Bottled and waxed, on 12/7/14. Will be tasting on 3/1/15. At that point it will be 10 months since brewing. At bottling it was fantastic. After 17lbs. Of strawberries they really come through. A nice rounded tartness. Will be nice to see what carbonation does.

    What yeast did you use? How much of the individual spices? Did you change up any of the malts? These would be the factors, I'd think. I opened up my last one, from two years ago, on Sunday, and it was fantastic.

    Just because there's no airlock activity, does not necessarily mean the yeast is not hard at work. Do you have a krausen? Maybe give it 3-4 more days - since you did have activity off the bat. After 3-4 days take a gravity sample and see where you're at. Just my two cents, maybe some of the...
