This has become my go-to Saison recipe over this past year. I've left the honey out, but the base recipe is fantastic. Have enjoyed playing around with oak and wines in secondary with it.
Tasting was great, sorry for the delay. Has been enjoyed by several others as well. I'm told for as delicate a fruit as strawberry the flavor really comes through. Very nice pleasant tartness. Carbonation could be a little higher. One big important piece of feedback I've been given is to...
Bottled and waxed, on 12/7/14.
Will be tasting on 3/1/15. At that point it will be 10 months since brewing. At bottling it was fantastic. After 17lbs. Of strawberries they really come through. A nice rounded tartness. Will be nice to see what carbonation does.

Looking forward to tasting again and getting this carbonated and...

I wonder if 2lbs. will be enough cranberry to stand out much against the massive chocolate notes. I like the idea though!

Going to brew this up again in January. Brewed it last spring for a friend's wedding, and want to do a one year anniversary batch to surprise them. Thinking of doing a 100% Brett version to differentiate it from the original.

Looks wonderful! Not giving up on mine yet. I will get this huge beer to carb. At least I'll know come brewing this again, in December, what to do next time to avoid the issue.
