    I have also heard that aging longer will help, and that adding some yeast fuel after fermentation has slowed or stopped will also help.

    My LHBS only carries winexpert, any suggestion for a good chianti. I have ordered a kit online that was ranked in the top 100 by wine maker. Chianti is what my wife and I drink mostly so that is what I would like to be able to focus on.

    I made winexpert kits. chianti and cab/shiraz the flavor was good in both, but when we compared the chianti next to a store bought chianti there was a noticable diffrence in the "bite". I think it may be tannins. I am going to try to make the same kit agian but divide it into 2 3 gallon...

    Drying out kit wine

    I have made several wine kits and they seem to turn out sweeter than similar store bought wines. I was thinking of using diffrent yeast to dry it out, or looking for grape skins. I am pretty new to wine but have been brewing beer for a while.

    I bottled Monday but havent tried it yet. I split the batch into several "sample batches". Plain Oaked Strawberry Vanilla Carbonated oaked I'll drink one this weekend since I'm on nights now

    Making mead tonight

    Insomniac wouldn't swirling the carboy with airlock in place simply push CO2 back into solution since it is heavier than the O2 and in theory would displace it (O2) in the head space of the carboy?

    Stuck fermentation?

    I haven't since I racked from my original primary. Way too early I might add, but that is what prompted me to add the nutrient. I counted when I got home and it is actually bubbling every 4 seconds. Guess I'm just really impatient.

    Tyrone sounds good. I have only beer right now as this is my first attempt at mead. I also have never had mead so not sure what to expect. it tasted good when I racked and took a Hydrometer reading.

    Flyingbeeranch it was mail order but they are great. I actually placed another order today for some pumpkin honey.
