    Don't add water, it would dilute the beer and risk infection. Unless that's what you want, then go for it.

    Apparently this is how Kolsch yeast begins fermentation, because the other carboy now has a blob and both are bubbling slightly. Very interesting, never used Kolsch yeast before.

    Dry hop for 2 weeks is fine, the less you touch the beer, the better. I wouldn't go through the process of trying to "remove" the hops out of the secondary, just wait and rack the beer out of the secondary as normal. If you want to wait 1 week in secondary, then drop the hops in, that would...
