    Hello from Raleigh, NC

I'm kinda new to this forum and also live near Lake Wheeler. Have been brewing on and off for 30 years now. Got back into it when my son can home from college last year for x-mass break and was interested in making beer. So I broke out my brewing equipment in the attic and show him the basics...

    If anything can go wrong....

Well after 3 weeks in the bottle I crack one open. Turned out pretty good if I must say so myself. I'll Give it another two weeks and I should be good to go. Shame half of it ended up on the floor, maybe I should have rung out the mop and squeezed the other half in bottles too just for fun...

    If anything can go wrong....

Had a nice batch of Belgian Dubbel Ale that I racked 3 weeks ago and decided to bottle it tonight. Sanitized my bottles and equipment and was good to go. I think it's time to flush my beer

Below is the recipe I used and the temps remain pretty constant around 68 degrees behind my bar upstairs in the carboy. So I had it in the primary for two weeks. I also rolled the carboy gently last week to see if that would do anything, but there was no change. This is my 3rd all grain batch...

I think it's time to flush my beer

I have brew a dozen malt extract beers and recently gotten into all grain. On my last attempt on a Amber Ale, I think I have to flush this batch down the toilet. After 3 days, fermentation seem to stop, was slow, not much activity, but left a thick creamy head in the fermentor. After 7 days...

First All grain Brew day today

I brewed Haus Pale Ale for my first all grain experience. I collected 3.5 gallons of water to mash 10.5 grains of mash. I fly sparged with 4.5 gallons of water and collected about 6.5/7 gallons of wort. All was going well until after an hour full boil, I was only able to collected 4 gallons...
