How does one do that while the cider is in bottles? And Lets say I wanted to keg it, would I just let it sit in the keg for a month? So over all close to 7 weeks for it to be completed?
So, UpstateMike, it looks like by reading your recipe it only took you 15 days to make this hard cider? I've never made cider before but would love to try it. I'm so use to waiting 6 weeks for beer to be ready that 2 weeks for a hard cider just seems strange to me lol.
I'm bottling a Maple Coffee Bacon Porter tomorrow. I added a pound of dried up crispy bacon to the secondary. I used some smoke grains in the grain bill too to kinda help it along. I'll update you guys about it tomorrow when I try it.

I think what I'll do is tone down the honey to .25lbs and pitch 2 yeast packets like a couple of you have suggested. Then I'll cold crash it and keg it. If all else fails, I get a extract kit from my LHBS.

Need to come up with a beer in 4 weeks for a buddy's birthday. He just brought it up and I said I could do it in 4 weeks...So how about a cream ale? Maybe add some rice to give it a crispness to it?

Yeah I don't want to ABV to be too high. I want something flavorful and something you can drink a couple of without getting too tipsy ;). Thats why I thought using 5oz at bottling would be a good idea. Get some sweet honey flavor but not overwhelmingly so.
