    Bluebberry Cyser

This sounds great. Any particular reason you let it go for so long?

    Saison problem?

Went to the LHBS yesterday night to pick up some yeast, and the owner suggested I try some yeast nutrient. $3 for enough for about 75 gal, so I thought I'd give it a go. Dropped a tsp of it in last night and gave it a swish with the wisk. Checked this morning and fermentation seems to have...

    Holiday Cider

I found a couple of these in the back of the brew closet the other day, and be warned - they do not age well. The flavor has become quite dry, and slightly sulphurous. I think maybe the cranberry or orange has done something funny as it breaks down some more. I don't think I would...

10 tips to better extract brewing

Talked to the LHBS owner and he helped start doing something akin to partial mash brewing. I've been using steeping grains since I started, but today I substituted some 2-row for a portion of the DME. Came in 0.002 under target but I think that's pretty good for a first try. Also tried...

    Saison problem?

The 3711 does look good but the only place I've been able to find it is NorthernBrewer. MoreBeer has a free shipping deal going on, but all I could fins for saison yeast was WLP565. Will this do it for me?

    Saison problem?

Thanks for the heads up. I got that from the Jamil Show link but didn't realize that the French strain would ferment out dry at lower temperatures. I guess that is what I need. Looks like I'll put an order in pronto. Also, thanks for the great explanation of making a starter ChshreCat.

    Saison problem?

I'll look into some of that 3711. I've never done a starter before, my understanding is I should mix up some sugar and water and pitch the yeast into it to give the little buggers a head start. Anything else I should do?

    Saison problem?

Hmmm interesting. When do you think I should have racked it? I think I actually used a yeast that was labeled "Saison", that might be a misprint in the recipe.

    Saison problem?

So I brewed the Sasion Kit from DIY on 1/30. OG = 1.054. I racked it to secondary on 2/11, and the SG was 1.032. Haven't seen any activity in a while, so checked it today and it is still 1.032. It tastes good, it's just sweet. Here's the recipe -...

10 tips to better extract brewing

Ok, so I've been doing late addition extract for a while, but have been steeping around 2 lbs. of specialty grains in 2.5 gal (and boiling the same amount) of water for every brew I've done so far. I think I would benefit from steeping smaller and then boiling around 3-3.5 gals (my pot can...

    Apple Pear Hooch

When I made this up it actually hit an OG of 1.130! It has been going a lot slower than I expected, but it steadily working. It is falling around 0.010 every week or 18 days, right now it comes in at 1.062, so we're already up around 9% abv. Tastes great, still just very sweet.

    Apple Pear Hooch

Sort of in between a cider and a wine, so we'll call it hooch. Apple Pear Hooch Target 16% abv Target OG 1.132, Target FG 1.008 Yeast: Red Star Premier Cuvee Sanitize 2 gal fermenter. Peel and wash 6 pears and 6 apples. Core and dice them, and add to sanitized fermenter. Add 5.5 lbs...
