I make my own . Never the same really . Some cajun seasoning , minced garlic , McCormick perfect pinch garlic and herb , Ms Dash salt free maybe some basil and caraway seed . good for everything .
Oh yes ! Mustard is very good on pork . I smoke mine with apple wood also and sometimes a mixture of apple and cherry . I usually put in just a little hickory at first . Mostly ribs so I use the 3-2-1 method . then like you I wrap it and let it sit .

Carbonation drops are iffy . I used them and they did not work out so well most of the time so I stopped . Better to use plain old sugar , whatever kind you like . I use table sugar. I get carbonation in as little as a week for my darker beers as they require a lot less carbonation to be good ...
