Have you tried using a piece of a "Potable Aqua" chlorine dioxide water purifier tablet to control any unwanted bacteria? I tried this once and it didn't seem to affect the yeast. Or haven't you had any contamination problems?

20 Gauge stainless windshields around the banjos. Banjo burner surface will be 4" below the kettles. I'm putting direct electric ignition pilots in as per Kladue's advice.
This is the new stainless steel brewery frame that I've just had built for me by Stainless Steel Fabrications, Raleigh NC (no business connection, but they treated me very well and were interactive in the design process). I've fitted my banjo burners.
IMHO for this design 2x2" is overkill. I've just built a larger 2-tier design out of 1.5"x1.5" 1/8" wall stainless (more along the lines of a Brew-magic) and the proportions are perfect, the structure ultra-rigid. You really don't need 2x2.
