    Infection? Maybe Not

I'm in China, fermenters are what they are. That would hold 15g, but we brew in 10g batches.

    Infection? Maybe Not

Hey Folks, Below is a picture of the top of our fermenting stout. We fermented this at 18c (64f) for 1 week (ambient room temp) and then I let the temp rise to 20c and then 21c over the course of 3 days. There was a thin layer of krausen on top when I started the temp rise. I give it a...

    Crafting a Black IPA

Just to clarify, are "we" suggesting that I only use the chocolate malt at the mash out and not use the Carafa 2? Thanks!

Cold China Brew - Tips for Cold Weather Brewing

It was so cold! We had issues with the gas tank losing pressure - even though we wrapped it. I think we will use a warm water bath for it next time. We also had issues with the hoses - I had to take the cleanup hose inside to the tub to warm it up. Ice also clogged the wort chiller hose...

Right on! We'll give that a shot. Thanks for teaching us a new technique as well!

    Crafting a Black IPA

Thanks - If I could get my hands on Carafa 3 I would, but that is not an option. I have never added grains to a mashout (we fly sparge) - how exactly would I go about doing that? How much chocolate malt would you add? Ddicker - I used that recipe as the basis of my malt bill. Thanks!

    Crafting a Black IPA

So...should I up the amount of Carafa 2 (EBC1100) to compensate for not using Carafa 3? And I might try to use San Diego Super yeast on this batch, if I can successfully harvest some from the 22oz bottle of homebrew that I brought back from the States.

    Simcoe/Maris Otter FWH/Hopburst SMASH

Perhaps mash at 154. I think 66IBUs for a 4.7% beer is a bit rough, but perhaps it isn't for your tastes.

    Crafting a Black IPA

Ladies & Gents, I am trying to craft a Black IPA, which I will brew in a month or so. I used Stone 11th Anniversary Black IPA (now called something else, which I can't recall at this very moment) for the basis of the grains - save for Cara Fa III, which I can't get over here - so I subbed in...

Cold China Brew - Tips for Cold Weather Brewing

I think, think it is NG - propane has only recently started to be available over here. After I filled the tank this weekend, the woman told me in the future she would use propane rather than liquid gas. Fine by me...and yes, I hope the pipes don't freeze! Yes, blankets, schnapps and a fire...

Cold China Brew - Tips for Cold Weather Brewing

Thanks for all the advice, people! I'll have to find some type of blanket to use as I don't reckon my wife will be keen with us using one of her blankets! Pre-heating the mash tun is a good idea as well. We usually add a bit of hot water to warm it up, we'll use more next time. And we...

Cold China Brew - Tips for Cold Weather Brewing

Hi Folks, We are almost all set to brew an American stout on Friday night. It is really cold here in Beijing and we'll be brewing outside. High temps for the day are 37f and lows of 15f. I suspect it will be be below freezing when we brew, so I am looking for some suggestions to make sure...

    I froze a KEG!!

Beijing is in a historic period of record low temps. I left my kegs outside the past two years and they never froze. I left them out for the three weeks while I was away, and they are both frozen solid. I'll thaw them out and put gas back on them. I am only concerned about the dip tube, but...
