+1 on LHBS challenges in NJ. My neck of the woods of North Cental NJ has one expensive place with an ok selection of grains/malt, and the other is run out of the closet of a brewpub (check you scales, boys!) - both 20+ miles away.

+1 DME. Storage, Freshness, and Ease of addition into the boil are positives. I also like the ability to control color via steeping grains with good resolution which adds variety and character to the beers I brew.

I did the ole 'forgot to close the spigot' trick on my primary bucket. So I'm cooling my wort through a plate chiller and focusing more on the connections on the chiller than the better part of a 1/2 gallon of wort on the basement floor. Beer turned out great though.

I've been to the Flying Saucer in Kansas City, MO while on travel. Usually about 200 total beers and around 120 tapped also. One nice part is when I get a Belgium beer, they usually also have the appropriate matching glassware. I'd rather risk a chance of having the occasional non-fresh beer...
I plan on using Weyermann Pale Wheat which said in the notes to incorporate a protein rest. That combined with more strike water for a less dense mash will hopefully be enough to sparge.
Can't you sparge a partial mash? Since I'm only planning on using 5 lbs of wheat, is it optimistic that...
Are you referring to pushing out the beer using CO2 at low PSI? If so, could I just cut the dip tube by 1/2 to 1 inch to help further? That'd be better than using a racking cane and siphon.

I was fortunate to pick up the pictured 10 gal corny keg for a mere 30 bucks after picking up an ebay win for a normal 5 gal variety. However, as pictured, it has what appears to be rust in the inside.
I'm in no rush to use this so I didn't scrub anything until I asked the HBT...
