I'd say to save one of those soured bottles and crack it in a year or so when you've got a lot more batches under your belt and your procedures a lot more *ahem* normalized. You'll be proud of yourself.

It should be fine. Only way to know for sure is take a reading. Can you see any krausen at all? I'd be shocked if properly sanitized yeast wouldn't ferment beer just from a little nap at 50 deg.
Yeast washing/rinsing is such a money saver, especially if you plan to use the same yeast type. Check YouTube, there's some great videos and it's really simple to do.
I'm always impressed and a little confused when people jump right in with an all-grain brew. Just curious - why did you skip extract? Either way, that's really impressive.
