My first attempt at making Ed's Apfelwein is turning out great. I had a glass tonight after sitting for 2 months and it does taste a little dry but I think it's good. On the other hand, to keep my wife happy which in turn allows me to continue brewing, I need to sweeten a bit to her taste...
