    Graff (Malty, slightly hopped cider)

Picking up ingredients for this today. Going with Danstar Nottingham yeast, Willamette pellet hops, and Crystal 90 (figured I would split the difference between the two suggestions). Looking forward to the results!

warm vs. cold conditioning/aging ales in kegs

I recently switched from bottling to kegging and I am wondering about conditioning/aging. When bottling, I would mix in the bottling sugar, cap and allow the bottles to carb and condition. I usually let bottles sit for at least 2-4 weeks at room temperature before chilling to serve. With...

Difference in Dry Malt Extract and Liquid Extract

There is a difference in the specific gravity potential: DME is more concentrated than LME, so you can convert to equivalent quantities: from LME to DME = weight of LME * 0.89 from DME to LME = weight of DME * 1.10 Also, some people mention problems with "extract twang" due to LME that is no...

Why do most homebrewers make really hoppy beer?

I am completely new to homebrewing but I have to agree that I am not a huge fan of super-hoppy beers. I have been trying to increase my appreciation of hoppy microbrews for years, but I still find myself coming back to the maltier varieties. In another thread, I came across this chart...

    chloramine removal ??

Good info here. Quick question - does campden (potassium bisulfite specifically) contribute any off flavors?

    British Mild.

Ok, so for liquid yeast, looks like Wyeast 1968 ESB is the way to go... My LHBS does carry Danstar dry yeast, so the Nottingham is certainly an option.

    British Mild.

orfy, Can you suggest a comparable White Labs or Wyeast yeast that I can pick up at my LHBS? I am looking forward to brewing this :)
