I pitch 1/2 to a full pack myself. I've only used dry yeast. I did a two SMaSH batches the same day, split the yeast, and they took off within 4hrs. Thankfully I use blowoff tubes.

I cook on a stove top and I get .75 gallon/hour of boil off. How big of a pot do you use? If you have a lot of extra surface area in your pot it will increase your boil off rate.
