    Rising Brix

Going to resurrect this old thread. Just noticed one of my wines Brix went from 9.0'Bx to 10.2'Bx within 1 month after racking and cold-crash (left it outside on the porch). Turns out culprit is temperature. My last measurement was room temperature and now is 2'C outside. When sample was left...

Pasteurization in multi-cooker on WARM function

I did a pasteurization cycle and turns out the WARM function has very slow ramp-up, after 1hr temperature was only 42'C. Noticed cooker uses its 900W heater only for few seconds then shuts it off for a minute regardless of temperature. I do not believe there is any thermostatic control, but...

Pasteurization in multi-cooker on WARM function

I made a jam wine and currently has good balance of alcohol and sweetness and need to stop fermentation. Decided to pasteurize. I already have heater with thermostat - a multi-function pressure cooker, big enough for at least 4x 750mL bottles. Unfortunately mine does not have mode with user...

What ABV cider did I make ? By refractomer 7%, by weight of released CO2 estimate 11%

Thanks all, so for refractometer there are different calculators than for hydrometer. That makes more sense. For the accuracy, using 1.0 correction, Sean Terill calculator (thanks @dmtaylor) gives 8.9% and Brewer's Friends calculator (thanks @Zambezi Special) gives 10.15%, => that is 14% spread...

Ghetto mead in PET bottle. Ontario, Canada.

Ghetto Mead cleared and racked. 1 week outside and its crystal clear. I drank some, threw out really cloudy part, keeping this half litre bottle for later. There is a glass of Lowicz jam (dzem) behind the bottle and letter are crispy clear, distorted only by the glass bottle.

What ABV cider did I make ? By refractomer 7%, by weight of released CO2 estimate 11%

Hello, Bought 3L unpasterized cider with advertised 92g/L of sugar, measured 10.6Bx (=111g/L, sg=1.043). Added 270g sugar for 10% alcohol potential, mixed in 1tsp EC-1118 activated at 36'C. Good shake, refractomer measured 17.94Bx/1.074SG, total weight 3598g including 66g 4L plastic jug...

Ghetto mead in PET bottle. Ontario, Canada.

The remaining hooch stopped the activity few days ago. No space in kitchen fridge, so I transferred it to back porch. Next week should be between -3'C to 8'C, will see how that works out. Thanks for the tip, usually they sell cider here in plastic jugs. I am currently running a small batch of...

Using salinity refractometer for homebrewing (Salt -> Brix Conversion)

I have salinity refractometer, it's tested and works well. New to homebrewing, I was looking for a way to use it instead of keeping multiple identical instruments with different indicator scale. At first was going to make conversion table through refractive index, and then found out someone...

Ghetto mead in PET bottle. Ontario, Canada.

Someone gifted me bottle of mead they brought from abroad, and I liked it. Never had mead before and it is hard to find it here. My local LCBO is out of stock all the time. I have some experience with fermenting foods and understand the process, but never made any alcohol before. Also not a...

Best way to measure total emitted weight of fermentation CO2?

Resurrecting this thread. Anyone was successful getting some data of fermentation jug weight loss ? I am not looking for automation, just estimate based on weight rather than measuring gravity with refractomer or hydrometer. The scale does not need to be extremely accurate, as weight difference...
