Last three batches of beer I've brewed have been severely over carbonated. Like gushing out of the bottle over carbonated! Any suggestions to prevent this in the future? Maybe if I let it ferment longer?

hey all, Followed several recipes for various types of ales with lots of success. (Except the all grain one...disastrous!) Anyways, looking to "make my own" ale but not sure what types of hops will give me what kind of flavor in the finished product. Don't care for anything too bitter so...
