    thanks for the info, all good possibilities. I use StarSan but just dilute it in tap water. I do a lot of racking and the hose smells like it. I don't think it tastes like cardboard but its been a long time since I've tasted that intentionally.

    It always smells strong no matter what I'm brewing with; extract or AG. You really notice it after you step out for a bit and come back in. But its a good smell, like Victory hop devil.

    My homebrews often smell and taste like the rubber Fermenthaus stoppers I use. Is that a common off flavor? I should mention these beers are high gravity and brewed in 1 gallon batches. I use about a half packet of dry yeast and am very careful about sanitation. What could be causing these flavors?

    resurrecting this thread cause I just tasted my first AG after conditioning in the bottle for 2 weeks and it has a rubbery taste. I've gotten the same taste from the local dive bars and always blamed it on a dirty beer line. Anybody know that funky taste I'm talking about? Maybe its just 'green'?

    I don't have a cellar, but I'd like to age some big beers, over 8% ABV. Will the beer be OK? What would be different if it was at a lower temp? What's different if they're homebrews? Also, is it ok to take a refrigerated beer and let it warm up to store?
