    pros and cons of 1 gallon cider batches...

    I feel the same way. I put together 1 gallon of Hansen's, 1 cup maple syrup and 1 cup light brown sugar with Vinter's Harvest yeast. It's delicious. I'm getting ready to do 3 gallons soon.

    It is Hansen's Apple Juice from Wal Mart. It is pasteurized no sorbate. It didn't smell moldy and I got an airlock on it. I'll see if it starts to ferment over the next couple of weeks. Belgium Lambic Cider, hmmmm? Vic

    Checked today. Looks as though it has fermented out. Hydrometer reads 0.999! Very harsh alcohol bite, very faint chocolate taste. OG was 1.121 per hydrometer. Want to transfer to secondary, any suggestions to bring out chocolate flavor? V

    With only 2 lbs. of honey per gallon you won't get a sweet mead. I'd use 3 lbs. per gallon or more. Also, use a yeast nutrient to help the yeast along. Vic

    Try back sweetening with lactose sugar (milk sugar), it is not fermentable by yeast. That way adding it with a priming sugar you get both carbonation and sweetened cider. Vic

    I believe I experienced the blowout due to using the entire package of yeast to ferment the 2.5 gallon batch. It currently sitting on a shelf in my brewing area with two hoses connected to the cap. I'll take a bunch of pictures and keep everyone posted. V

    Colorado Springs local honey source

    I checked out Wally World (WalMart) and their clover honey is nothing but honey according to their label. It's #3 at $7.92. That's cheap enough for me. Vic
