DS18B20+ is easiest for Arduino because the analogue to digital conversion is already done for you. Also the 1 wire network is simple to set up and use and works over relatively long distances with no problems.

The wire needs to be rated for mains voltage and 2W same as the potentiometer. In practice anything except the thinnest hook up wire will be OK.

The STC-1000 is down well below $18 again on Amazon.

For primary I would guess it doesn't matter much - it's in not there long enough.
