Quick update, we moved the temp probe behind the coolant shelf instead of just sitting on top, and it appears to be holding at 37.

Well some bad news, I just asked Dad how its been holding up and he said it has been too cold, so back to the drawing board sorry. Perhaps a way to insulate the coolant shelf in the back.
