    What's the flavor I don't like? (Fat Tire/Stone IPA)

I think you are describing crystal malts which would make sense. But if it is specifically the toasty/nutty note that Fat Tire has going on, I am absolutely convinced it is a small addition of pale chocolate malt, if that is what you are thinking of.

    Experiment gone wrong, advice welcome!!!

Sometimes adding fruit to secondary can kick start a vigorous refermentation. I wouldn't worry! If the yeast are going that crazy, risk of a secondary infection is very low.

    Plain Brown Dog

Just wanted to update as I cracked a bottle last night. I know you are probably thinking that this is just another boring brown ale, but this beer is awesome! Its one of the rare times that what I was imagining in my head actually matched up with my results. Its still a bit green and could...

    5x pepper beers

I am a huge habanero fan and would love to pack loads of that fruity funky flavor into a beer without the blasting heat. One of my ideas, that I haven't had an opportunity to try out yet would be to obtain some some Zavory habaneros (100 scoville units) or Trinidad Perfume (1000 scoville...

Do you ever just make up a recipe and say "Suuure why not?"

I think this is a great approach to brewing. I like to picture a beer in my head using your (as one poster put it) "taste imagination". Do you want citrus notes? Banana in the nose? Caramel? Toasty or roasty flavors? Try to picture every detail with as much vividness as you can. Then try...

    brewing on Mars

I think noblebrew is right, the colonists are going to be drinking hooch. How many acres of barley will need to be grown to keep a colony flush with beer? Probably way to much domed realestate that will have to go to producing food and oxygen initially. I'm guessing they will bring some...

    brewing with rosemary and mint!

I used a french variety of mint, called banana mint (yes it has a hint of banana) in a Biere de Garde. Needless to say, the beer came out really really weird. I'm still not sure if it was the herbs or the the T-58 femented too warm, or possibly a combination of the two, but it took alomst a...

    Hopburst Summer Wheat Ale

How about something like this? 15M .5 oz Mosaic 15M .5 oz Simcoe 7M .5 oz Mosaic 7M .5 oz Citra Flameout: .5 oz Mosaic Flameout: .5 oz Citra Flameout: .5 oz Simcoe Dry Hop: .5 oz Mosaic, 1 oz Topaz, 1 oz Citra This is 6 oz of hops in a 4% ABV beer, is this too much? (Granted, I realize this...

    Hopburst Summer Wheat Ale

At the moment I'm experimenting with some lower gravity extra quaffable beers for late sping/early summer drinkin. For this one, I want a light ~4% abv beer with a massive hop aroma and flavor, but not a lot of bitterness. (for my homeys who do enjoy the occasional homebrew, but don't like...

Looking to clone Not Your Father's Root Beer (Small Town Brewery)

Hmm, good to know- thanks! So to reforumulate (and I'm scaling down to a three gallon batch for the first go at this)...how does this look? 3 lbs Light DME 2 lbs Marris Otter 1 lb Dark Brown Sugar or Piloncillo (should provide a nice rum-like note) .5 lbs Crystal 80L 60M .5 oz Fuggles (~10...

Looking to clone Not Your Father's Root Beer (Small Town Brewery)

Where to start on the base for this one? Something like this? (note, I'll probably keep it down in the 6-7% ABV range) 6 lbs Dark DME 3 lbs Marris Otter 1 lb Dark Brown Sugar 1 lb Crystal (120L) .5 lbs debittered black patent or other smooth dark malt Hops? Don't know- maybe just a very...

    Plain Brown Dog

New beer! Shooting for something balanced, malty, hoppy yet drinkable. Going for toasty notes vs carmel though I do want a little of that. Thinking somewhere in between Half Acre's Over Ale and Fat Tire. 3 lbs Light DME 5 lbs Optic Pale Malt 1 lb Victory Malt .5 lbs Pale Chocolate Malt...

Looking to clone Not Your Father's Root Beer (Small Town Brewery)

Subscribed! I had this the other day and it is really amazing stuff! I think when i give this a shot maybe bulk up on medium crystal to provide the sweetness this needs and then add lactose in secondary if it is still not sweet enough. Was going to try from scratch, but I think that increases...
