    Saison open fermentation - when to "close"?

    Hello, I'm fermenting a saison right now, I use a tin foil on the carboy, so it's an open fermentation. I've read that you're supposed to put an airlock on it when activity stops, to avoid oxidation. How soon should I do that? When I see no more bubbles rising? I use a glass carboy.
