Hello, I'm fermenting a saison right now, I use a tin foil on the carboy, so it's an open fermentation. I've read that you're supposed to put an airlock on it when activity stops, to avoid oxidation. How soon should I do that? When I see no more bubbles rising? I use a glass carboy.

Thanks for the answer! I imagined it's dangerous to pour hot liquid into glass. Guess I'll be leaving it in the kettle then. I'll try to see how fast I can chill on the same night, but I doubt I could finish chilling, rack, aerate and pitch fast enough that I don't finish quite late, it usually...
