    I pitched T58 in december. Was 1.095 for 3 gallons so I cut it to 4 gallons to get 1.074 8 weeks later at 65 degrees F its 1.020 I feel confident this will turn out well, but I usually do belgians in the summer for winter drinking, where i am able to finish primary around mid 80's in temps...

    Ok pics, but there is a black pudding skin covering it, so i guess in the name of science ill hafta scrape it off and *blech! Take a pic, but ya know it has no smell. And its texture is like a creamy clay. It haunts me.

    Um , so i was working in the yard cutting some brush and i stepped into this big squishy thing. I look down and see this tan glob, about 18inches across round and about 10 inches thick, wtf is it? Ohh its the yeast i dumped near the stone wall last year! It grew?!     Ive often wondered about half pitching, or mixing yeasts to cure that over Belgian taste. say 11g -05 and 5g T-58 for clean up??

    I agree with ross3648, get it to a warmer climate to rouse the yeast .its not uncommon to let a Belgian finish over 80°

    I have done a few beers with T-58 and its rival T-33, both are good to 11% I find that it is for Belgian beers, the 58 really leaves alot behind that cannot be masked. Great for a tripple, I kept one bottled for over a year and it was amazing, the banana will mellow off after 6 months, but...

    hmm, yeah id make a small batch of that, sounds like one beer would be good, but to have to power thru a 5g keg would be torture.lol!
