use potassium sorbate as instructed when you get it (1/2 tsp per gallon, dont mound.) make sure fermentation has halted, i usually rack the cider first, then add the p.sorbate, then check for action overnight, if its quiet, ill back sweeten with a few cans of juice concentrate of my choice...
