PJJ, I have a very nice garnish for these sausages. It is a traditonal Peruvian one called "sarsa".
1 large white onion sliced once through root and end
1 Jalapeo or Serrano pepper, seeded and diced(more of you're so inclined
1 juice of 1 lemon or lime
salt to taste
prep:
cut onion in thin half-moons, rinse in cold water, squeeze/drain
combine ingredients
this is yummy on almost everything

Looks good, but we typically will eat these all up at our Oktoberfest party, and we go traditional for that. I'll have to try that on another occassion
