I do a very similar, but with bacon. I imagine prosciutto would be good as well, and will need to try that next time I make some up.
I mix up the filling a bit.. last time I mixed some smoked salmon (from a buddy in Washington) with cream cheese and stuffed them. I've also mixed shrimp with cream cheese.
