No, he's crash cooling it. The wort has already fermented and he's dropping the temperature sharply to force all the proteins out of solution. Everything precipitates out and makes nice, clear beer. Works really well.

I started putting mine into the kegerator a few days before trasnferring to keg. nice and clear.
