Wyeast 1728 too cold

    Hi Ya'll,
    In the process of building dualstage temp controller as we speak. Shipping delays caused this problem. My fermentation chamber is in my car port (2 walls open and attached to the house) and it held steady at 61 degrees for 4 nights straight. Last night it finally dipped into the low 30's here in NC and the wort temp read 38 this morning. Should I swap to secondary, repitch yeast, or just slosh the bucket around to rouse the yeast?

    What was the OG? What's the SG now? What's your expected FG?

    I'd warm it up to around 68-70, range is listed as 55-75, give a swirl (not sloshing it) and see if it picks up fermentation again. As mentioned above it might not be a bad idea to take a new reading and see where it is.

    Got the fermentation a-bubblin again. OG was 1.091, didn't want to take a second reading until I transferred to secondary. I brought it inside and gave it a warm bath to get it back up to the 65 then slowly got it back down to 60F after swirling the bucket around. im in the middle if building a dual stage temp controller and am waiting on my heat source to get here tomorrow night. I didn't anticipate it getting that cold after I brewed.

    Everything turned out nicely. Gravity at transfer to secondary was 1.014. Added some toasted oak chips and waiting to bottle
