wyeast 1084

    this maybe stupid and already asked im just now planning my 2nd batch, but in the description for wy1084 it state that complex esters will increase when fermentation is above 64f, what exactly is a complex ester

    1084 has a very wide fermentation range. The warmer that you ferment within the range the more ester/fruity flavor in the final beer.

    Esters are the fruity flavors that ale yeasts produce during fermentation. That 'ale' flavor, that's esters. Most yeasts kick more esters the warmer you ferment them, and most beers call for the esters to be there, but restrained. So.... most brewers try to keep temps in the middle to low side of a particular yeast strain's range. For info on Wyeast, their site has a 'yeast strain guide' that gives you the info on most of their yeast strains, 1084 will surely be in that list. :mug:
