I was wondering if I can be doing an additional sparge to capture ~gallon of weaker wort to use for future yeast starters? I would boil off and store in separate mason jars in the fridge along with the yeast. When it was time to use a starter, I would warm to room temperature and combine the saved wort and yeast. Any reason why this would not work?

    Thanks

Many people can wort for starters. Keeps without refrigeration.

Yup I can wort for my starters just do up a extra 5 gallon batch of 1.040ish wort and then can it all and it holds steady on my shelf. Canning 5 gallons takes a while but the savings and time to do the starter is worth it.

Honestly don't even have to boil it since you need to pressure can it. There still will be hot break in the jar whether its boiled or not at least for me.

Pressure can it @ 15-17psi for 20 mins and your set.

You've got to pressure can it (to about 255*F) to store at room temp or long term. Simple boiling ain't gonna cut it.
