White Labs Ultra Ferm and bottling

    I've used ultra ferm in a couple of batches recently and am enjoying the dryness it gives to my last couple of beers. It ferments down, but not all the way to 1.000, I've landed at 1.004 & 1.002 and kegged these batches, so no worries. It seems to continue to work though.

    I'd like to bottle a beer and use ultra ferm on and am wondering if it will overcarb the beer?

    Anyone use it and then bottle yet?

    Add the Ultra Ferm when pitching the yeast.

    Normal bottling procedure is fine. Raise temp toward the end of fermentation and/or use other methods to make sure gravity is stable.

    Yeah, I've added it before pitching the yeast, but I've had different FG's on the two beers I've brewed with the same yeast with Ultra Ferm. So I'm worried if I'm going into the bottle with 1.004 FG, that it will continue to ferment out.

    Have you bottled a beer with Ultra Ferm? What was the outcome?

    I bottle my Brüt IPA and have never had an issue using UltraFerm in the fermentor. Always check gravity twice to ensure complete fermentation and you should be fine.

    Yeah, a couple. In my experience gravity stabilizes within a normal timeframe, like a week and does not continue.
