Hi all.....was wondering, as silly as this may seem, if someone could give me a basic idea as to what a wheat beer should taste like. I ask because I brewed up a small batch of wheat beer earlier this month and cracked open a bottle about 30 mins ago. I thought it was a little on the sweet side and there's an after taste that I can't quite put my finger on...it's not a bad after taste...just...different thanm what I'm used to(this was my 1st wheat)...
I know there are many many variables that affect the final outcome, but I was wondering if someone could give me an idea of what a typical wheat would taste like....FWIW..I used Danstar's Munich Wheat yeast.
Oh, BTW..this was an AG beer(don't know if that matters)

    Thanks...

My first AG batch was a hefeweizen. I'm not exactly a wheat connoisseur, but I also noticed a strange aftertaste in mine. I wouldn't say it was bad, just unexpected. It is also very hard to describe.

I mainly brewed this batch for my little brother, who is a wheat beer connoisseur. He LOVED it! I asked him if he noticed a strange aftertaste and he said he thought it was supposed to be there. I've also had several other BMCers try it and they loved it too.

So, I can't answer your question, but I do know what taste you're talking about. Until I find someone who can identify it and tell me what I did wrong, I'm going to consider it part of the style.

If you would like to try what I consider a standard hefeweizen, look for Paulaner Hefeweizen, or Hacker-Pschorr Hefeweizen. In my opinion those two are pretty close to the style (in my not so educated opinion).

I don't like wheat beers (and especially hefeweizens, which are made from wheat but taste "spicy" from the hefeweizen yeast unlike American yeast beers) but I'm not sure I can describe why. There is a slight sour note from the yeast, but not a true lemony sour, and well as the wheat flavor which I find unpleasant. I think the best description I can come up with is slighly sour Grape Nuts.

Thanks guys.....I did notice a very slight sour taste, but I didn't know if that was "normal".

I get a little "sour" from real hefe yeast too, but its not a true acidic sourness, just sort of a flavor that's similar.

Last Hefe I did had a distinct "Cold Raw Bacon" aftertaste for the first few months.. Then is mellowed out and was fantastic..

I'm not a huge fan of the hefeweizen either (though I do love me some wheat-ish beers, like Bell's Oberon). I always feel like they leave this weird coating on my tongue.
