What to do with 12 gallons of 10% stout?

    Its been in primary for 12 days, plan to go about another 2 weeks in primary and rack to secondary to age whenever convenient in that general timeframe.

    Took an sg 1.013 today and still some signs of fermentation. I think its going to go lower. Will plan to add some lactose/maltodextrin if it tastes too dry when bottling/kegging time comes.

    For secondary, I have two 5 gallon carboys and two 1 gallon glass jugs to experiment with different adjuncts.

    So what would you do in the secondary with 12 gallons of 10% stout? I'm thinking 5 gals as-is or vanilla only. But anything goes for the rest. Thinking something spicy, something oaky, something ??

    Oak for sure
    But how about cinnamon sticks?

    Oak is a given. I'd also add Brett to some part of it.

    Last year I made a Foreign Extra stout with oak (the oak had been soaked in Bourbon) and Brett C. It was one of my favorites.

    I have 10 gallons of stout that I have in two 5 gallon batches. I make a soured wort that is canned so it can be added at any point in the process. I added about a quart of it to one of the batches near the end of primary. They are both conditioning in kegs and I'll compare the differences when done.
