    Pickapeppa Mango is great. I eat it on nacho chips. Easy to go through a bottle in a sitting. BTW, I made a clone (somewhat) here.

    Tomatilla Salsa

    This batch had a little of everything. Besides what's in the pic, I also tossed in a bunch of sweet red & yellow peppers.

    The lime zest and juice really makes this salsa a treat. Tomatillas already have a limey tomato-y flavor. Get some sweet Vidalia onion in there and some jalapeno to add the kick and you'll be dipping till it's gone.

    The other week I made pork chops, mashed potatoes, and green sauce

    SWMBO: Why don’t you just have the green sauce, I don’t think I want that.
    Me: Ok, I did put a little bit on your plate in case you change your mind since we don’t have apple sauce.
    SWMBO: The green sauce made the whole meal! I loved it!

    Woman! Y U NO TRUST HUSBAND?!

    Green sauce sounds good! Did you pick up the book? I've looked at it but haven't pulled the trigger.

    I made a version of ceviche the other day. Here it is marinating, drained & on the plate. It made for a nice, light lunch.

    I smoked up some meatball and sausage on my Kamado Joe Classic then simmered in a marinara sauce, came out great

    I just watched this one again from the BBQ Pit Boys, my mouth's watering...

    Make sure the veggies don't burn & take them drippin's to make some sawmill gravy & biscuits!

    I just got back today from camping for two nights in Olympic National Park. I discovered a very tasty meal very easy meal to whip together quickly. Fry up some onion, bell pepper, and garlic. Add in a kielbasa cut into chunks and a package of ready rice with salt, pepper and hot sauce. Nothing fancy but very easy and delicious. I made this on the tailgate of the Toyota and this was my view while eating more or less:

    Camping food tastes so danged good. I smoked sausages over a fire just outside Yosemite a couple of years ago. Made a cribbage board out of some cardboard and toothpicks. What a great night.

    Look out when you cut the last box elder if you have box elder bugs on the trees. Cut the last tree and they will find the house next. Don't ask how I know this.

    Rained like crazy yet another afternoon yesterday, so i made burgers on the stove with Grill Mates Chipotle & roasted garlic seasoning. Fried 18 strips of bacon in my blackened cast iron pan to put on top of the burgers with pepper jack cheese on top of that. Took some canned beans with brown sugar & all that stuff & cooked them in the bacon bits & drippin' to go with. Add some onions with ketchup & sriracha &...:mug:

    Nothing spectacular today, but I have some butternut squash roasting in the oven now, gonna puree later, to go along with a simple beer can chicken from the oven. Rubbed with olive oil, salt, pepper, and garlic powder. Mixed the liquid inside with half Dr. Pepper and half a pale ale I made. Perfect for an easy going Sunday.

    Testing my new homemade grill out for the first time. It still needs some revisions, but does the job. I had to get it working because we are having non-stop high winds during the next few weeks according to the weather man. My gas grill does not like wind.

    So, I broke her in with some ribs.

    Right now, cooking up 5 pounds of peppered bacon; next up, 10 pounds of ovenroasted potatoes; then 5 pounds of BBQ potato chips; then a vat of salsa, and last but not least, flatbread pizzas for dinner.

    Giant pot of red beans (with ham/sausage of course). To be eaten later with rice (cauli-rice for me) and corn bread.

    Do you make your own sun-dried tomatoes? I have seen people in the villages in Greece making them by laying tomato slices on wire screens. I think it needs hot days with a strong wind.

    I got put in charge of the kitchen and grill for my friends' vow renewal. I cooked a lot of things, from a kitchen management perspective. I did have the kitchen and grill to myself for a couple hours, so I smoked these chicken leg quarters with an improvised foil pan smoke box on a gas grill. Come dinner time, I had to steal a thigh from one of the kids to even get a taste. I also made a by request elotè style corn salad with queso fresco, Monty jack, creme fresh, and Valentina hot sauce. New summer staple. Burgers, steak, hot dogs, ham...and a bunch of other stuff too. Shared a twelve pack of my HB with some folks too.

    Great weekend.

    I think this is my favorite thread on HBT. I love brewing and I have 3 batches of beer (all belgians) and a batch of apfelwein going but man I love checking in on this thread and seeing all the tasty stuff people are into.

    For dinner today was some crock pot pork shoulder (nice and fatty) rubbed with fajita seasoning, pintos from scratch with onion, garlic, bay leaf, hot sauce, rendered pork fat from the crock pot, salt and cilantro from the garden and avocado tossed with salt and pepper. Your plate:

    Luckily they are the wrong gender for bugs. We had the right one when I was growing up and they were ALL OVER the house! Hated those things. Harmless, but creepy as hell.

    I managed to cut up two of the trees that were in our yard before the chainsaw got too wonky. I think I'll have to take it in for service.

    I didn't get to cook at all this weekend, other than breakfast on Saturday.

    I'm thinking eat some in simple syrup like you would canned peaches and the rest make into a smooth puree and make a vodka cocktail. You could call it a jacktini.

    Edit: Also, YES mead. You don't need to make 5 gallons, just make a gallon!

    Maybe cider...I was just going to try 2 gallons, but the general recipes I was looking at called for 3 pounds of honey per gallon. And honey around here goes for at least $6 lb, unless I find a really good deal. I might try canning some in syrup. The raw flavor is odd...some definite banana, with pineapple and mango, but the texture isn't very appealing and there is something odd in the raw flavor that just isn't appealing to me. Maybe cooking or fermenting will change that.

    Next time I will sub out some of the jalepenos for red peppers and simply make MORE OF it. Wife and I could have sat and ate this with pita for dinner, rather than just a snack.

    So, I used a couple of pounds of the Jackfruit to start what I will call a "cider". 5 minutes boiling in a 2:1 ratio water/sugar syrup, a gallon of water, 3 more cups of sugar and one cup (11 oz) honey...1 t. pectic enzyme and 2 crushed campden tablets. Need to figure out yeast. OG is 1.083.

    Maybe I'll can the rest or try making a jam.
