I'm about a week away from moving my Hi-Nelson Saison into secondary. I have a fair amount of extra dried hibiscus flowers, so I decided to go ahead and make a little Agua de Jamaica and kind of start getting a taste for it. I brewed 1-1/2 cups of dried flowers with 1-1/2 quarts of water, 1 stick of cinnamon and 2 whole cloves. Added another 2 quarts of cold water and 10 packets of Truvia. Tasty over ice! I imagine a little rum or tequila would be nice...maybe a splash of pineapple juice? Ooo...maybe some tepache!

Oh, Glorioskies! Agua de Jamaica and Tepache is good! (No additional photo...it looks the same.) Wish I had some rum in the house!

Moving on to a bomber of New Holland Imperial Hatter. So damn good. Perfectly balanced DIPA and well hidden 9.3% (plus floatie flavor crystals!), I love this time of year when they release all the Hatter variants in bombers because I can usually find this one for $5 :ban:
For some strange reason Imperial seems to be the cheapest of the 6, not that I'm complaining.

Cropduster IIPA from Laht Neppur Brewing Co. In South Eastern WA. This little unknown brewery makes some killer beer, if your ever passing through Waitsburg WA stop and try the Oatmeal Porter, or the Laughing Boy Stout.

On to coffee now. I put my saison on the porch last night (I didn't have a chance to pitch the yeast until 10pm) and it is rocking this morning. The temps over the next few days should give me a really funky batch compared to last year. :)

Do you just cover it up and leave it out there? The idea has crossed my mind but had not tried it.

Put the lid on, attached a blow-off tube and then covered it with a big garbage bag (tucking the flaps under the bottom of the bucket.) There's a good chance of t-storms the next couple of days so I didn't want to give water any chance on getting in, but temperature-wise it should be good. 3276 takes 70-95 and we'll be hitting the high-80's today and tomorrow and then mid-80's for a few days. I think this will give me a lot of funk :rockin:

It will. I don't know if you remember, but I had left mine fermenting near my fire pit during winter. I used a different sacc strain, though, which is notorious for stalling in the 20s. It did in fact stall at 1.026 and that's a good thing because I had Brett B in there. From what I had read, the more sacc and remaining sugars there are for the brett to eat, the funkier it'll get. Mine is already smelling pretty funky.

    Afternoon Coff.
