Two empty 5 gallon carboys.

    So I have two empty 5 gallon carboys. What should I make? I already have a braggot going (Otter LME and orange blossom honey), 5 gallons of orange blossom Mead, and 5 gallons of cider. What should be next?

    Something sour. Flanders red/brown, sour blonde, etc.

    O Tannenbock Spruce Ale, perhaps?

    Another possibility might be some apfelwein, so that you can compare it to the cider that you're making.

    I guess it depends on what you're interested in or preparing for.

    Also, depending on your location, it might be a great time to get some chokecherry or other harvest-type wine going.

    It's a stronger dark ale, with added seasonal spices: vanilla bean, cinnamon, nutmeg, ginger, allspice. Also known as winter warmer or Christmas ale.
