    I'm thinking of doing a wheat beer and adding a few things to it to achieve what I will dub "peach cobbler".
    Gonna use DME and it will only be a 1 gallon test.
    Thinking of adding 16 oz peaches in heavy syrup to primary and ferment on top of that. Once fermentation slows (day 5-7) add a vanilla bean and 1/2 a cinnamon stick and let ferment for another 2weeks.
    Don't really want to rack it but I will if that's what's needed to impart the flavors I'm looking for.
    Any suggestions?

    I would add the peaches after primary fermentation is complete. Fermentation is going to scrub out the aromatics you get from the peaches. Pitch the yeast, let fermentation complete, add the peaches, wait a few days for renewed fermentation from the sugars in the fruit and syrup, then add the vanilla and cinnamon.

    Also, 2 weeks is probably too long for the vanilla and cinnamon. After adding those, start sampling every day or every other day and bottle it as soon as the flavors are where you want them.

    I think you can do it all in a single vessel without racking. I wouldn't bother going to secondary if it were me.
