    Where is everyone getting the Denny Conn recipes? I keep hearing about them.

    I'm doing that deception cream stout next week! Let me know how yours turns out. I have a ton of different beers planes for when I'm home next week. Doing 4 different ones!

    Oatmeal stout
    Chocolate stout
    Robust porter
    Deception cream stout.

    We must be on the same page. I brewed the robust porter a couple weeks ago and now it's in secondary with some vanilla beans. Pretty excited about that one.

    We'll see how this deception cream stout comes out but I had little to no hot break because my stove didn't have enough oomph and the OG was off due to too little boil off so I don't have high expectations. It is fermenting away happily though.

    Thanks for the link, Cidah. I'll have to give some of these a try, especially that barleywine.

    Very cool - my deception stout on the nitro is disappearing fast. It is really tasty.

    rust, how was the left hand stout - I was considering that one down the road too.




    I am planning on catching up on some brewing as well over the break. I am hoping to do the following:
    1. Guinness Clone rebrew
    2. Celebration Clone
    3. And maybe get my pilsner Urquell clone going!

    I might even shoot for one more - a Chocolate stout sounds darn good too.


    I have brewed several Denny brews of which the Rye IPA is my favorite so far.

    1. Wry Smile IPA
    2. Denny bourbon Vanilla Porter (very good so far but needs some age on it)
    3. Nick Danger Porter - very good porter as well! People at an xmas party last weekend were calling it top notch and out of this world.

    I plan to brew the altbier down the road, but I keep rebrewing teh rye IPA haha.

    Since I have not been home I have not had my lhbc milk stout but when I do I hope to try it. I did taste it when leggings but it did need some aging

    The LHMS clone I've done comes out amazing. I did the deception cream stout last night. Using my Bayou Burner definitely kept me nice and warm in the garage =)

    Did you do the LHMS clone as stated in the recipe section? Or is this one you conjured up yourself?

    I almost thought I saw a BYO version of that clone - will have to check.

    Looks different from the one in the recipe section. The one I've done a few times:

    Milk Stout (Left Hand)

    7.75 # US Pale Malt
    1 # Roasted Barely
    12 oz C60
    12 oz Chocolate Malt
    10 oz Flaked Barley
    8 oz Flaked Oats
    4 oz Munich
    1 # Lactose (15 min)
    0.75 oz Magnum (60 Min)
    1 oz Kent Goldings (10 Min)
    Yeast: I've used both Denny's 50 and American Ale from Wyeast

    Mash at 155 for 60 mins.

    I love the taste of it, and I finally got my hands on LHBC Milk Stout locally. And I actually like this recipe over the real stuff.

    First, Merry Christmas everyone!

    I just got into AG a few months ago and SWMBO hooked me up today. Not one, but TWO turkey fryers (so I can, in her words, do two brews at once), a yeast starter kit, a grain mill, grains, hops, and yeast for a batch of brew (LHMS clone, my favorite so far), brewsmith software, and a carboy cover.

    So, she either likes my brews so far, wants me away from her, or is just plain clueless of what she did (lol)!

    So lucky to have her!!

    belated merry xmas guys.

    Had to say I am super pumped - I was having some issues with my pid and finally autotuned it. Now my water heats and stops at the exact temp I tell it to. Before I was getting a slight overshot and decided to wait to autotune until I brought the rig indoors. Anyway... very pumped. Doing my guinness rebrew and home to get in the celebration brew either today or this week. Also looking to do a pilsner urquel clone so I can let that one sit for a long time to lager!

    CBK think I will be taking on your wee heavy recipe this weekend! Any substitute for challenger that you have had luck with in the past? Just in case the LHBS doesn't ahve it, I know I don't

    I have used Northern Brewer and noticed no difference. Perle hops should work as well. By the way my deception cream stout is going fast. Really thinking about doing this one again. Good luck and hope you enjoy the Scotch Ale. The longer it is aged the better it gets.

    gonna grab the yeast today and try to ramp up a good starter for this weekend, kind of pushing it with time, but oh well! Only thing I am missing is the peat smoked malt

    Yeah my deception is almost gone! Was a hit over the holidays with my dad - he couldn't believe the creamy aspect of the nitro either. I am getting worried my oatmeal stout rebrew won't be ready for nitro in time!

    Thanks for the hop sub, I might just run with the NB hops because I have a over a lb of them. I have been in a lb hop buying phase (just buy a lb of whatever hop I need) I have a freezer full of hops and need to start ripping through them :D



    Do you think the MOPA makes a big difference? I was considering using CM-PALE since I have a lot of it.

    so of course the lhbs had peated malt.. but not smoked. I grabbed some smoked malt too, so I will either have to smoke the peated malt myself if I have time, or make an adjustment for peated and smoked malt additions. at least they had the yeast!

    Sorry for the delayed response had to leave for work. (B shift) Peated malt is distillers malt smoked over peat. A little bit goes a long way. This is a very malt forward beer. FWIW IMO MO would be the preferred base for this style of beer.

    Yeah, peated malt is smoked malt. Just opening the container at Sunset and you'll get hit in the face with smokeyness.

    Merry christmas as well guys! Im doing a hop inventory now planing what I want to brew. I'd like to get 4 batches in this week (maybe 2 lagers and 2 porters) but I'll need to finish off a keg first to make room. I'm not feeling great so I'm going to have to rely on some pinch- drinkers :)

    Haha nice - sounds like you have some time off like I do!

    just started my pilsner/celebration ale strike water :D Haven't decided yet.

    Thanks for the info on the peat - I thought it smelled super strong, but have never used this malt before, so I was sort of unsure what to expect.

    Yeah that was my thing too. Love the darks but started to think I was overlaoding... hence the pilsner urquell! Which I did today. Didn't get as much boil off as I hoped so ended the brew session heavy on volume. However ended at 1.050-1.051 (was shooting for 1.056). Had a bunch of wort left over over (fermenting in kegs since I am out of fermenters!).

    I did a single infusion mash with a mash out decoction that I boiled for 20 minutes. Used distilled water too since my water is hard. Anyway, looking forward to it!

    I've made the Centennial Blonde recipe, you could try that with some of that corn split. Also, the squeeze my lemon blonde looks good. No links as I am typing this on my phone.

    And a couple shots of the brew rig so far. Still not painted and we are working on where and how to put in a swing arm for the control panel, as well as a way to mount the pumps (only have one now but plan to get a second soon).

    First you have the power I just recently ran in so I can have two GFI 30 amp outlets going to two control panels (one for HLT and the other for the BK).

    Next is the stand shots and the current control panel I have. Going to be making two separate panels in the near future (santa brought me a second PID for xmas).

    You can see I ghetto rigged the pump switch for the brew sessions with a clamp :D

    ok now off to get some stuff done... unbrewing related!

    cbk - any special fermentation temps for the scotch ale (ramping, etc.)? or just keep it at around 68?

    I usually ferment at the low end of the recommended temp range for the yeast being used. 65 for WLP028 or 60 for Wyeast 1728. Could probably go as low as 55 for the 1728. I am still using the swamp cooler method do not have room for a ferm chamber. It is good to see your rig coming together. Is the Blingman in the pic the 15 gallon pot that is for sale?

    ok cool, i will follow suit with the scotch ale ferment temp. I always try to honor the recipe first (then I can't blame anyone but myself if it screws up! haha)

    That is the blingman my buddy wants to sell to upgrade. That one is his pot, the HLT is mine, including electrical (15g MEGAPOT). The BK is his pot 25g MEGAPOT), and my electrical. We tried to split the hardware as much as possible. When we do the double batch of the scotch ale we will be pushing the MT limits haha. It is a 39lb grain bill plus 50+ qts strike water, it won't fit. so chunkier mash or might do a second mash in a small pot w/ a few lbs of grain. My tun can hold 36lbs and 45qts strike water at 1.25/lb grain strike to grist ratio. Perfect for most IPAs, but barley wines push it.

    Love that blingman. For a MT I am convinced you can't beat them and their false bottoms.

    Thanks for the tips on the scotch ale - we are planning to either do a solo run, or do the scotch ale and a cream ale for my wife (and of course me)

    I am currently doing 5 gallon batches. Been wanting to step up to 10. Have a 10 gallon blingman and 2 10 gallon coolers. Been thinking about a 15 gallon blichman mlt and a 20 gallon brewpot. It would probably be tight for a big beer. How much grain can you fit in the 15 gallon tun with 1.25 qts/pound?

    Sorry dude. Just reread your post and you already answered my question. Yeah I love my Blingman too. I think I could make this work with a 20 gallon brewpot, a 15 gallon mash tun and my 10 gallon blickman as a HLT with a cooler for backup if I need more sparge water.

    Yeah I think you could. I only went 25 with the BK just in case I went nuts... and to avoid boilovers with 11g batches. The 15gmt is perfect for 95% of our batches. But my buddy wants bigger! haha.

    The HLT at 15 is plenty big for us. We could upgrade, but that is a lot of dough for just hot water :D

    Kate the great was a 40lb is grain bill. My efficiency plummeted when I had to go less than 1.25qt/lb on that one. still made he brew, but we kept saying, man, a 20g MT would be nice.


    Last note on this, the less head space the better for heat retention. i.e. since the 15g MT for most reasonable grist bills (36lbs or less) gets filled right up you lose little or no heat based on that and the thermal mass. So part of me wants to jump to the bigger tun; however like I said for 95% of the brews we do a 15G tun is perfect. I am wondering if we went to a 20G tun if we would have heat loss issues. So if someone buys it great... if not... great! I will let fate decide - in the mean time we will make beer! :D

    I am sure that you are enjoying some of your hard worked brews tonight (I know I am). We are toasting the new year with some of my over 2 year old champagne styled cider I made.
