Son Of Fermentation Modification Idea!!

OK so I need to get a fermentation chest built fairly soon and I have see the SOF chest as well as a fermentation chest using a freezer and glycol with a radiator and fan. My idea was to combine this, but use a spare cooler and ice water instead of a freezer and glycol. I can get the parts quickly and build out the SOF so I will not even need to open it for 2 weeks. All I would need to do is swap out ice bottles in the cooler to keep the water cold.

Anyone thought of this option? Does it seem like an idea that would work?

 

I suspect that 2 weeks is a bit optimistic, but there are builds like this out there that have worked. Post some pictures and some specs when you're done!
