Smack Pack Question

    Hey guys,

    Quick question on the smack packs. I smacked open a pack of Wyeast American Ale 2 and was ready to make a yeast starter with it. The pack was sitting out in 72 degree room temp for about an hour. I found out that I am not going to be able to brew tomorrow though, so I was wondering if I put this back in the fridge, how long will it stay good and viable for? It shouldn't expand and the yeast should remain inactive if I have it in the fridge right?

    It might expand, but that doesn't matter. Even on Wyeast's website, they say it doesn't have to expand before using and often when I make a starter I don't even smack it at all.

    Just stick it back in the fridge, or go ahead and make your starter. Either way is fine.

    You are making a starter? Then who cares. Take your standard sanitation precautions and start away! Try not to temp shock the yeast along the way.

    Also, down the road when you have time to brew make sure you account for the extra time since yeast packaging when calculating your yeast starter size.
