I would like to try and make a Mead, 1 gallon, to see if I like it along with my homebrewing of beer. So anyone know of a simple recipe for me to try for my first batch? Thanks all!

Have you looked into Joe's Ancient Orange mead?

Check out the following web address. Also read through all the chapters to give you an idea how different mead is from beer but chapter 6 is the recipe for JAOM.

JAOM can be drinkable in 3 months but is much better with aging. You can do simpler meads but they normally take longer untill really drinkable. For a really simple recipe you just need honey (not the cheap Costco/SAMs Club stuff), spring water, yeast (preferably not a bread yeast) & some yeast food. Mead must/wort has very little nutrients so you can use commercial yeast nutrients like DAP or you can go a more organic route and chop up a small handful of raisins & boil some bread yeast in some water to use as nutrients. Happy brewing!

While I like JAO, despite what Joe says about it being ready when it's cleared, I've never found it like that. I prefer it when it's been aged for at least 6 months.

I would suggest that you try it but keep as close as is possible to the recipe, that way you'll know how it should be for a benchmark batch of the recipe. If you're unsure, just make it, then once it's cleared, bottle it in beer bottles with crown caps, then you can take a taste of it once a month and understand how it develops in flavour. Maybe even make tasting notes etc.......

Once you have invested all those months of waiting...........you'll kick yourself for only making a gallon. 6 months is ok, a year is good, 2 yrs is really good and 3 years is OMG. I.m trying to make 5 gallons / yr. Really struggling to get into a 3 year rotation as this is only my second batch. I still have about 3/4 of my fall 2010 batch. Every bottle gets a lil better.
